Shaped- Finnish Shortbread (Minnesota)

Finnish Shortbread (Minnesota)
4 cups flour
1/4 teaspoon salt
1 1/2 cups sugar
2 cups soft butter
1/2 cup finely chopped almonds
2 eggs, well beaten.
Recipe
1. Preheat the oven to 375 degrees.
2. Sift the flour into a mixing bowl.
Add the salt. one cup of the sugar and
the butter. With the fingers, work
butter into mixture and knead into a
dough.
3. Divide the dough in half. Roll each
half until it is long and slender,
one-half to one inch in diameter. Cut
the rolls into two-inch lengths. Press
each slice with the back of the fingers
to shape into cookies.
4. Combine the remaining sugar with the
almonds. Brush the tops of the cookies
with the beaten eggs, then sprinkle
with the sugar and almond mixture.
Arrange on baking sheets and bake seven
to ten minutes.
Yield: About four dozen.
