Shaped- Two Sugar Shortbread

List of Ingredients
1 lb salted butter - softened to a mayonnaise-like consistency
Add ½ cup brown sugar
Add ½ cup white sugar
1 cup rice flour
2 1/2 cups white flour
Recipe
Mix butter and sugars, blend well
Add 1 cup rice flour *
Blend well again
Add 2 ½ cups *Five Rose’s** white flour
Mix with hands into a ball (suggest chilling hands under cold water and dry)
Form into 1” balls – press lightly with fork to create indentations but do not flatten
Bake at 275 F approximately 30 min until bottoms are slightly golden. Make sure the bottoms do not brown too much
* Use Rice Flour because that's what Jane and Gloria are telling us to use!
** Don't mess with success--use Five Roses brand!
Makes about 100 cookies
