Scotch Egg
List of Ingredients
5 eggs
1 oz. flour
12 oz. pork sausage meat
Salt and pepper
2 tsp. fresh parsley
4 oz. dried breadcrumbs
Vegetable oil
Recipe
Boil 4 eggs in shell 10 minutes. Cool and remove shells. Place sausage meat in bowl, add chopped parsley; hand mix well. In deep pan or deep fryer, heat vegetable oil for frying. Meanwhile, coat eggs with flour, seasoned with salt and freshly ground pepper, and cover completely with layer of sausage meat (wet hands help to mold it evenly). In bowl, dip each coated, cooked egg into remaining egg (beaten) and roll in breadcrumbs. Fry in oil until golden brown. Drain well. Serve hot or cold.
