Chinese Chicken with Cashew Nuts
List of Ingredients
2 tablespoons low-salt soy sauce
2 tablespoons rice vinegar
2 tablespoons dry sherry
1 tablespoon chopped fresh ginger
2 medium garlic cloves, crushed
3/4 pound boneless, skinless chicken breast, cut into 1/2-inch pieces
2 teaspoons sesame oil
1/4 cup cashews
1/2 medium red onion, sliced (1 cup)
1 medium red bell pepper, sliced (1 cup)
2 teaspoons cornstarch
Salt and freshly ground pepper
2 scallions, sliced
1/2 cup raw brown rice cooked according to package directions
Recipe
Mix soy sauce, vinegar, sherry, ginger and garlic together in a small bowl. Add chicken and set aside.
Heat a wok or skillet on high and add sesame oil. Drain chicken, reserving liquid. Add chicken and cashews to wok; stir-fry 2 minutes and remove to a plate. Stir-fry onion and bell pepper 2 minutes. Mix the cornstarch with 1 tablespoon water and add to reserved marinade. Add marinade, chicken and cashews to the wok; stir-fry 2 minutes. Remove from heat. Add salt and pepper to taste. Top with scallions and serve with rice. Makes 2 servings.
