Welsh- Welsh Rarebit
List of Ingredients
1/4 cup butter
5 tablespoon flour
1/2 teaspoon salt
2 cups milk
1/4 teaspoon Worcestershire sauce
1/2 pound sharp cheese, grated
1 egg, beaten
5 slices hot toastRecipe
Make a white sauce of the first 4 ingredients (in a saucepan over low heat: melt butter, whisk in flour and salt blending thoroughly, increase heat to medium, slowly pour in milk blending well as it is poured in, bring sauce to a gentle boil while stirring). Over medium to low heat; add Worcestershire sauce and cheese and stir vigorously until cheese it melted (do not let boil). Pour in well-beaten egg, stirring constantly, and continue to stir while cooking about 1 minutes longer. Serve immediately over the hot toast. Sorinkle with paprika, if desired. 5 servings.
