Almejas a la Marinera (Clams Sailor Style)
List of Ingredients
1/4 cup olive oil
3 to 4 garlic cloves, minced
3 dozen small clams, cleaned and drained
1/4 cup clam juice
1/4 cup white wine
2 tablespoons fresh bread crumbs
1/3 cup minced parsley
Recipe
Heat oil in a heavy skillet, add garlic and stir for a few moments without coloring. Add the well-drained clams; stir to coat with oil. Add clam juice and white wine. Cover and cook at low heat while shaking the pan often for about 5 minutes or until clams are fully opened. Add bread crumbs and parsley. Shake and serve at once. Makes 4 to 6 servings.
Per serving: 210 calories (62 percent from fat), 15 grams fat (2 grams saturated), 29 milligrams cholesterol, 12 grams protein, 6 grams carbohydrates, 0.3 gram fiber, 106 milligrams sodium.
A simple recipe, easy to make and fabulous to eat. If you are out of clam juice use white wine only, and if out of bread crumbs just add one tablespoon of flour when you add the liquids. Equally delicious!
