Salmon- Herb-Roasted Salmon

List of Ingredients
1 1/2 pounds salmon fillet
3/4 teaspoon salt
1/4 teaspoon pepper
2 teaspoons fresh thyme (or 1/2 teaspoon dried)
2 teaspoons fresh oregano (or 1/2 teaspoon dried)
1 tablespoon fresh tarragon (or 3/4 teaspoon dried)
5 thin slices lemon
Recipe
1. Preheat oven to 450 degrees. Line baking sheet with foil, coat it with cooking spray and set the salmon, skin-side down, on the foil.
2. Sprinkle the salmon with spices and herbs. Arrange the lemon slices down center of the fillet.
3. Cover the salmon loosely with a piece of foil and roast in the center of the oven for about 20 minutes, depending on the thickness of the fillet. Makes 4 servings.

For each serving: 316 calories, 34 g protein, 2 g carbohydrates, 1 g fiber, 19 g fat (4 g saturated), 100 mg cholesterol, 537 mg sodium.
Serving Suggestions
Scrub but do not peel small red potatoes; cut in thin wedges. Toss with olive oil, salt and pepper and place in a single layer on a baking sheet. Roast in the oven until browned on the undersides; turn and roast until tender.
