    Scallops- Sauteed in Mustard Sauce

    List of Ingredients




    1/2 cup dry white wine
    1/2 cup clam juice
    1 tablespoon Moutarde de Meaux
    1/4 cup whipping cream
    1 pound bay or sea scallps
    All purpose flour
    2 tablespoons (1/4 stick) butter
    2 tablespoons peanut oil

    Recipe



    Combine wine and clam juice in small saucepan over high heat and bring to boil. Stir in mustard. Add whipping cream and blend well. Return to boil, then reduce heat and simmer until sauce is reduced by 1/4, about 15 minutes. Keep warm.
    Coat scallps lightly with flour, shaking off excess. Heat butter and oil in large skillet over medium heat. Add scallops and brown lightly on all sides. Pour off excess oil. Stir in sauce. Heat until scallpos are cooked through and sauce is consistency of whipping cream, about 5 to 10 minutes.
