List of Ingredients
SERVES SIX
3 1/2 pounds chuck roast
2 tablespoons cooking oil
1 small onion, chopped
1/2 teaspoon salt
3 anchovies
4 tablespoons vinegar
2 tablespoons honey
16 whole peppercorns
1/4 teaspoon allspice
2 bay leaves
1 1/2 cups beef broth
Wondra flour
Recipe
Brown meat well on all sides. Add all the other ingredients. Cover and bake in a 350-degree oven until tender, 2 to 3 hours.
Discard bay leaves and thicken the gravy, if desired, with a paste made by mixing some Wondra flour mixed with cold water. Serve with potatoes or cooked noodles.
No, I would not recommend instant mashed potatoes unless there is a Level 4 emergency. Boil peeled russet spuds until they can be easily pierced with a fork. Mash them adding warm cream or evaporated milk. Add melted butter in proportion to your stress level. A couple of unpeeled cloves of garlic, roasted slowly then squeezed into the potatoes as you mash them, can't hurt.
Add the salt slowly, as the potatoes are being mashed, to achieve the perfect pot of comfort food.
