Ground- Spicy Chipotle Burgers
List of Ingredients
About 2 tablespoons olive oil
1/2 cup diced onion
1 tablespoon adobo sauce (from a can of chipotle in adobo sauce), or to taste
1 chipotle chile pepper (from a can of chipotle in adobo sauce), seeded and finely chopped, or to taste
1 1/2 pounds lean ground pork
1 egg
2 tablespoons dried bread crumbs
2 tablespoons chopped parsley
Pinch of sugar
1/2 teaspoon salt, or to taste
2 Haas avocados, peeled, seeded and diced and tossed with the juice from
1 lime and salt to taste
3/4 cup sour cream (optional)
Recipe
In a small sauté pan over medium-high heat, heat 1 tablespoon of the oil. Add the onion, reduce the heat to medium-low and cook until softened, about 4 minutes. Transfer the onion to a plate; set aside to cool.
In a large bowl, combine the cooled onion with the adobo sauce, chopped chipotle, pork, egg, bread crumbs, parsley, sugar and salt and, using your hands, mix until thoroughly combined.
To taste for seasoning, form a very small patty using about 1 tablespoon of the meat mixture. In a small, nonstick saucepan over medium heat, cook, turning once, until browned on both sides and cooked through. Taste; add seasoning to the remaining pork mixture as needed.
Form the pork mixture into 6 burgers. Heat a griddle or large saucepan over medium-high heat. Add just enough oil to lightly coat the pan. Add the burgers and cook, turning at least once to brown both sides evenly, until done, 15 to 20 minutes. The internal temperature of the burgers should be at least 160 degrees.
Serve the burgers topped with the diced avocados and, if desired, sour cream.
