Ground- Swedish Meat Balls
List of Ingredients
1 cup fine dry bread crumbs
1 teaspoon salt
1/2 teaspoon brown sugar
1/4 teaspoon pepper
1/4 teaspoon allspice
1/4 teaspoon nutmeg
1/8 teaspoon cloves
1/8 teaspoon ginger
1 pound lean ground beef
1/2 pound ground pork
1/2 cup mashed potatoes
1 egg, beaten
3 tablespoons butter
Recipe
In a large bowl, mix together 1/2 cup of the bread crumbs and the salt, sugar, pepper, allspice, nutmeg, cloves and ginger. Add the beef, pork, potatoes and egg, and mix lightly. Shape into balls about 1 inch in diameter. Roll lightly in remaining crumbs.
Heat butter in a large skillet over low heat. Working in batches if necessary, brown the meatballs. Shake pan frequently to brown evenly and keep balls round. Cover and cook about 15 minutes or until thoroughly cooked. Serve hot. Makes about 3 dozen.
Per meatball: 66 calories, (69 percent as fat), 4 grams protein, 1 gram carbohydrate, 5 grams fat (2 grams saturated), 0.1 gram fiber, 21 milligrams cholesterol, 96 milligrams sodium.
