Lamb- Lamb Burgers With Mint Sauce

Prep time: 35 minutes. Cook time: 8 minutes. Serves: 6.
Burger:
1 1/2 pounds lean ground lamb
1/4 cup chopped fresh basil, parsley or oregano
2 cloves of garlic, or to taste, minced
1 egg
1/4 cup oatmeal or bread crumbs
1/2 teaspoon black pepper
1/2 teaspoon cumin
1 cup cubed mozzarella (or dried ricotta) cheese
1/4 cup extra virgin olive oil
6 rolls or hamburger buns
6 large lettuce leaves
About 12 whole fresh mint leaves
Sauce:
1 cup plain yogurt
1/2 cup chopped fresh mint
Salt and pepper to taste
1/4 cup mint jelly
1 cucumber, minced
Recipe
In large mixing bowl, blend lamb, basil (or parsley or oregano), garlic, egg, oatmeal (or bread crumbs), pepper and cumin. Shape into six 3/4-inch-thick patties. Press cheese cubes in center of patty, being sure to cover it with some of the meat mixture. Brush patties on both sides with olive oil.
Grill or broil patties 4 to 6 inches from heat source to desired degree, checking with an instant-read thermometer. (Figure 3 to 4 minutes per side for medium rare.) While burgers are cooking, combine sauce ingredients in small mixing bowl and set aside.
Serve burgers on buns topped with lettuce, mint and sauce.
