Nonstick cooking spray
1 (25-ounce) package frozen beef ravioli
1 (15-ounce) container ricotta cheese
1 (10-ounce) package frozen chopped spinach, thawed and well drained
1 egg, slightly beaten
1 teaspoon dried basil
1 (26- to 30-ounce) jar prepared pasta sauce, divided
3/4 cup shredded Parmesan or Asiago cheese
Recipe
Preheat oven to 350 degrees. Lightly coat a 9-by-13-inch baking pan with cooking spray. Cook ravioli according to package directions. Drain; set aside.
In small bowl, combine ricotta cheese, spinach, egg and basil; set aside. Spread 1 cup of the pasta sauce in bottom of baking pan. Arrange half of the cooked ravioli in a single layer. Spread the ricotta mixture over ravioli layer. Top with remaining ravioli and remaining pasta sauce. Bake, uncovered, for 30 to 35 minutes, or until sauce is bubbly. Sprinkle Parmesan cheese over top. Let stand for 10 minutes before serving.
Yield: 6 servings.
