Removing a small strip of peel from the potatoes creates an attractive contrast between the red skin and the white potato underneath.
List of Ingredients
2 pounds new or small potatoes
1 stick (4 ounces) unsalted butter
3 tablespoon club soda
2 teaspoons salt
1/4 teaspoon freshly ground pepper
Recipe
1. Peel away a strip of skin around the center of each potato.
2. In a large skillet, preferably nonstick, melt the butter over moderate heat. Add the club soda, salt and pepper. Add the potatoes in a single layer. Reduce the heat to moderately low, cover tightly and cook shaking the pan occasionally to prevent sticking, until potatoes are tender, about 20 minutes. In any liquid remains in the pan, increase the heat to high and cook uncovered for 1 to 2 minutes, shaking the pan, until only a coating of butter remains. Toss the potatoes to coat and serve hot.
