Cheesy New Potatoes
List of Ingredients
12 medium-size new potatoes, unpeeled and cut in cubes
1/2 cup butter or margarie, melted
1/4 teaspoon pepper
1 cup fully cooked real bacon pieces
2 cups (8 ounces) sharp process American cheese
1/4 cup chopped fresh parsleyRecipe
Cover potatoes with salted water, and bring to a boil; reduce heat, and cook about 15 minutes or until tender. Drain potatoes, and cool slightly. Stir in butter and pepper; toss lightly.
Spoon half of potato mixture into a lightly greased, 3-quart casserole. Top with half each of bacon and cheese. Repeat layers. Bake at 350 degree F for 20 minutes or until bubbly. Garnish with parsley. Yield 8 to 10 servings.
