Chicken Masala
List of Ingredients
3 pounds chicken, cut into 8 to 10 pieces
2 tablespoons salad or vegetable oil
2/3 cup natural yogurt
1 teaspoon ground ginger
1 teaspoon garlic paste
2 teaspoons ground cumin
2 teaspoons garam masala
1 teaspoon salt
Juice of 1 lemon
2 teaspoons ground black pepper
2 teaspoon ground mango
1 teaspoon kasuri methi
1 teaspoon dry mint powder
Recipe
Marinate the chicken pieces overnight in a well-mixed marinade made from the oil, yogurt, ginger, garlic, cumin, garam masala, salt and lemon juice. Roast chicken with marinade, wrapped in baking foil, in a preheated 375 degree F. oven for 40 to 50 minutes. Save the liquid and mix with the black pepper, mango, methi and mint powder. Mix well and keep aside. Cool chicken slightly and cut into bite size pieces. Pour in the liquid mixture and mix well. Transfer onto baking tray and bake for further 10-15 minutes until the chicken pieces are dry. Serve as a snack, or with cocktails.
