Light- Tandoori-Style Spiced Chicken
List of Ingredients
4 pieces frying chicken thighs (or equivalent chicken parts)
4 tablespoons plain low-fat yogurt
2 tablespoons lemon juice
2 tablespoons vinegar
4 teaspoon Tandoori Spice (or 2 teaspoons each curry powder and paprika, plus optional pinch of ground cumin and ginger)
Recipe
1. Pull skin of thighs away from meat but do not remove. With sharp-pointed knife, make several deep slits in the meat. Thoroughly combine remaining ingredients in a plastic bag. Add chicken, manipulating bag to evenly distribute the marinade. Refrigerate for several hours.
2. Remove chicken from marinade, adjust chicken skin so it recovers the meat. Coat skin with remaining marinade, shaking off excess. Arrange thighs in a shallow broiler tray. Broil 6 inches from heat source for 15 minutes, turning and basting frequently with pan juices. Move 3 inches closer to heat source. Broil, turning frequently, for another 12 to 15 minutes, until skin is very crisp.
