Orange Tarragon Chicken
List of Ingredients
4 chicken breasts, skinned, boned and split
1 tbl. grated orange zest
1 cup fresh orange juice
1/4 cup fresh lemon juice
1/3 cup honey
2 tbls. Worcestershire
1 tbl. fresh tarragon or 1 tsp. dried
1 tsp. dry mustard
Salt and pepper to taste
2 tsps. cornstarch, dissolved in 1 tbl. water
Recipe
Combine orange zest, juices, honey, Worcestershire, tarragon, mustard, salt and pepper.
Pour over chicken breasts and marinate, covered, in the refrigerator for two hours.
Bring to room temperature and place chicken and marinade in a large flat baking dish.
Bake, covered, at 350 degrees for about 30 minutes or until done.
Thicken sauce with cornstarch mixture and ladle sauce over chicken when serving.
Garnish with a sprig of tarragon pushed through the center of an orange slice and with grated orange and lemon zest.
