Dilled Rice Pilaf

2 tablespoon unsalted butter
2 cups converted rice
2 cups chicken broth
1/3 cup snipped fresh dill, or to tasteRecipe
In a large heavy saucepan melt the butter over moderately low heat, add the rice, and cook the mixture, stirring, for 1 minute, or until the rice is coated well with the butter. Add the broth and 1 3/4 cups water, bring the liquid to a boil, and cook the rice, covered, over low heat for 20 minutes. Fluff the rice with a fork and let it stand, covered, for 5 minutes. Stir in the dill and transfer the rice to a heated serving dish. Makes about 6 cups, servbing 12
