Parmesan Rice with Walnuts
List of Ingredients
2 tablespoons fresh parsley
2 garlic cloves, peeled
1/4 cup walnuts
1/2 cup freshly grated Parmesan cheese
4 tablespoons olive oil
2 cups Chicken Stock
1/2 teaspoon salt
Juice of half a lemonRecipe
In a blender or food processor, blend the parsley, garlic, and walnuts. Add the cheese and mix well. With the motor running, slowly add 3 tablespoons of the olive oil. In a saute pan, heat the remaining oil. Add the rice and stir until well coated. Add the Chicken Stock, salt and lemon juice. Bring to a boil, cover, and simmer for 20 minutes or until all liquid is absorbed and the rice is tender. Stir the cheese mixture into the hot rice and serve.
