Wild Rice and Apple Cider Pilaf

2 cups unsweetened apple cider
1 cup wild rice
6 tablespoons unsalted butter
1/2 cup sliced almonds
1/2 cup raisins
1/4 salt
1/2 teaspoon freshly ground pepper
1/2 teaspoon cinnamon
1/4 freshly grated nutmegRecipe
1. In a large noncorrodible saucepan, bring the cider and 1 1/2 cups of water to a boil over high heat. Reduce the heat to moderately low and stir in the wild rice. Simmer, covered, until the rice is tender but still firm, 30 to 40 minutes. Strain, discarding the cooking liquid.
2. In a large skillet, melt the butter over moderate heat. Add the almonds and raisins and cook, stirring unti the almonds are light brown, about 5 minutes.
3. Add the salt, pepper, cinnamon and nutmeg. Stir in the wild rice and cook until warmed through, about 1 minute.
