    Dressing- Creamy Roquefort and Walnut

    1/4 pound Roquefort cheese

    1/2 cup mayonnaise

    1/2 cup buttermilk

    1/2 cup walnut oil

    1/2 cup apple cider vinegar

    1/2 bunch scallions, thinly sliced

    1/4 bunch Italian parsley, finely chopped

    1/4 cup chopped toasted walnuts

    Kosher salt, freshly ground black pepper to taste

    Cayenne pepper to taste

    Process half the Roquefort with mayonnaise, crumbling and reserving second half. Add buttermilk, oil, vinegar; process again. Mixture should have consistency of creamy mayonnaise. Remove from food processor; stir in scallions, parsley, crumbled cheese, walnuts. Season to taste with salt, pepper, cayenne.

    Per cup serving: Calories, 215; protein, 1 gram; carbohydrates, 2 grams; fat, 24 grams; cholesterol, 9 milligrams; sodium, 161 milligrams.



    Makes about three cups
