Yield: 1¾ cups
3 ounces grated Parmesan cheese
3 tablespoons granulated sugar
1 tablespoon (scant) granulated garlic
1 tablespoon (generous) dried oregano
1 teaspoon (scant) table salt
1 cup soybean salad oil
½ cup (generous) red wine vinegar

Note: Krieger’s recipe starts with 10 pounds of grated Parmesan. To scale the recipe down for home while preserving the same proportions, we have specified “scant” and “generous” amounts of several ingredients, just use a little bit less or a little bit more than indicated.
1. With your hands, combine Parmesan, sugar, garlic, oregano and salt in a deep bowl, really working the mixture, breaking up even minute clumps of any individual ingredient.
2. Add oil and vinegar. With an immersion blender (a regular blender will over-process the oregano), process for 2 or 3 minutes, blending extremely well.
3. Cover and refrigerate for 24 hours. If the dressing separates, give it a quick stir before serving.
