BBQ- Jolly Mon Bubba Barbecue Sauce

List of Ingredients
Makes 1 1/2 cups
1/3 cup minced onion
2 tablespoons minced scallion
1 (15-ounce) can tomato sauce
3 tablespoons dark brown sugar
2 tablespoons cider vinegar
1 1/2 teaspoons ground thyme
1 teaspoon minced Scotch bonnet pepper
1 teaspoon ground allspice
1 teaspoon ground dry mustard
1/4 teaspoon salt
1/4 teaspoon black pepper
Recipe
In medium saucepan over medium heat, cook onion and scallion for five minutes, until soft but not browned.
Add all remaining ingredients; bring to boil; reduce heat, partially cover, and simmer for 20 minutes. Remove from heat and cool. Sauce will thicken as it cools, making for a substantial consistency that stays on a basting brush. To store, cover and refrigerate or freeze.
