Butter- Green Pepper Butter

1 cup minced green pepper
1 stick (1/2 cup) plus 2 tablespoons butter, softened

In a skillet cook green pepper in 2 tablespoons of butter over moderate heat until it is soft. Puree it in a blender or in a food processor fitted with the steel blade. In a small bowl work the puree into 1 stick butter, softened, and add salt and pepper to taste, and force the mixture through a fine sieve into another small bowl. Let the butter stand, covered for at least 1 hour. Serve the butter with broiled lamb.
