Butter- Marchand de Vins Butter
List of Ingredients
1 cup dry red wine
3 tablespoons minced shallot
1 stick (1/2 cup) butter, softened
1 teaspoon minced parsley
Salt and pepper to tasteRecipe
In a small saucepan cook the shallots and wine over moderately high heat until the liquid is reduce to about 1/4 cup and let the mixture cool. In a small bowl cream together the butter, parsley and salt and pepper, to taste. Work in the wine mixute, one tablespoon at a time. Let the butter stand, covered, for at least 1 hour. Serve the butter with broiled steaks.
