Butter- Cilantro-Pumpkin Seed Butter
List of Ingredients
1/2 cup toasted, salted pumpkin seeds (about 2 ounces)
1/2 cup cilantro leaves
3 large cloves
3/4 cup (1 1/2 sticks) butter, room temperature
Freshly ground pepper
Recipe
Mince first three ingredients in processor. Add butter and blend until smooth. Season with pepper. Divide amond 3 small ramekins; smooth tops. (Can be prepared ahead. Cover and refrigerate 4 days or freeze up to 3 months.) Serve butter at room temperature.
Terrific on tortillas or multigrain breads. Makes about 1 1/4 cups
