Cilantro Sauce

2 cups packed cilantro leaves
1/2 cup extra-virgin olive oil
2 cloves garlic, peeled and minced
1 teaspoon minced fresh ginger
Salt
Grated zest of 1 lime
1 tablespoon freshly squeezed lime juice
Freshly ground black pepper
Recipe
Process the cilantro, olive oil, garlic, ginger, and 1/4 teaspoon of salt in a food processor, pulsing until the mixture is a fine puree. Add the lime zest and the lime juice, and process until mixed. Season with salt and pepper to taste. Serve immediately, or cover tightly and refrigerate for up to 2 days. 3/4 cup.
