Asian Chicken Soup
List of Ingredients
3 cups (canned) coconut milk
2 tablespoons chicken bouillon
2 cups cooked chicken
1 small onion, chopped
2 green onions
2 cloves garlic, chopped
1/4 to 1/2 teaspoon crushed chili peppers
2 tablespoons lemon juice
1/4 teaspoon turmeric
Steamed white rice
Green onions, for garnish
Chili peppers, for garnish
Recipe
Heat coconut milk and bouillon to boiling. Add chicken, both kinds of onions, garlic, chili peppers, lemon juice and turmeric. Simmer 15 minutes.
Scoop rice into bowls using ice cream scoop. Ladle soup around rice; garnish with green onions and chili peppers.
Variations: Add finely sliced mushrooms, cooked carrots and green beans in the last few minutes of cooking.
