Cream of Zucchini Soup
List of Ingredients
5 medium zucchini, shredded
1 medium onion, chopped
1/4 pound butter
1 quart chicken stock
1/4 cup flour
1/2 cup cream
Italian seasonings, to taste
4 tablespoon Parmesan cheese (grated or shaved)
6 sprigs of parsley, choppedRecipe
Saute the zucchini and onion in saucepan in butter. Add the flour and mix well, stir in the chicken stock and seasoning. Stir and simmer until the soup is quite thick. Add the cream.
When serving, top with Parmesan and parsley garnish
