Fresh Cod Stew
List of Ingredients
3 tablespoons olive oil
1 large onion, sliced
1 head fennel, sliced very thin
3 cloves garlic, smashed
1/2 cup oil-cured black olives, pitted
1 (8-ounce) can tomato sauce
1 (8-ounce) bottle clam juice
1 fish bouillon cube (preferably Knorr's)
1 pound fresh cod fillet, cut into large chunks
Red pepper flakes (optional)
Recipe
Heat oil in a skillet and saute onion, fennel and garlic until soft. Add
the olives, tomato sauce, clam juice and fish bouillon cube and simmer 30
minutes. Add the fish and simmer 10 minutes longer. If sauce is too thick, add
up to 1 cup water. Sprinkle with red pepper, if desired. Makes 4 servings.
