    Spicy Chicken Coconut Soup (Tom K'a Kai)

    List of Ingredients




    3 cups water
    1 stalk lemon grass, sliced
    1 cup mushrooms, sliced
    2 cups chicken, cut into bite-sized pieces
    1 cup coconut milk
    3 tablespoon lemon juice
    4 tablespoon fish sauce
    1 tablespoon chile paste
    3 cayenne chiles, ground

    Recipe



    In a saucepan, combine the water, lemon grass and mushrooms, bring the mixture to a boil. Add the chicken, coconut milk, lemon juice, fish sauce and chile paste.
    Cook approximately 10 minutes before adding the ground chile to taste.
