Cauliflower Indian Style

2/3 cup vegetable oil
2 large cauliflowers, washed and cut into flowerets
4 tablespoon finely chopped fresh ginger
2 tablespoons turmeric
1 teaspoon cayenne
2 tablespoons salt (approximately)
5 tablespoons coarsely chopped fresh coriander
2 cloves garlic, finely chopped
Recipe
Heat oil in a heavy saucepan until very hot. Add the cauliflower and the remaining ingredients. Mix well until everything is combined. Cover and saute for 8 minutes. Just before serving, add another tablespoon of chopped coriander. Serves about 8.
