    Spinach- Creamed Spinach

    List of Ingredients

    1 pound fresh spinach
    1/4 cup butter or margarine
    1 medium onion, chopped
    1 clove garlic, crushed
    1/2 cup commercial sour cream
    Dash of salt
    1/4 teaspoon pepper
    Pinch of ground nutmeg
    Paprika

    Recipe

    Remove stems from spinach; wash leaves thoroughly, and tear into large pieces. Cook spinach in small amount of boiling water 5 to 10 minutes or until tender. Drain; place on paper towels, and squeeze until barely moist.
    Melt butter in a large skillet; saute onion and garlic in butter until tender. Stir in next 4 ingredients. Add the spinach, and cook over low heat until thoroughly heated; sprinkle with paprika. Yield 4 servings
