Delightful Apple Spice Mini Muffins

Recipe Introduction


My son, Zack made these for fair, as mini muffins. They are very good!!





List of Ingredients



• 1/2 cup margarine
  
• 2/3 cup granulated sugar
  
• 2 eggs
  
• 1 1/2 cups all purpose flour
  
• 1 teaspoon cinnamon
  
• 1 teaspoon allspice
  
• 2 teaspoons baking powder
  
• 1/2 teaspoon baking soda
  
• 1 cup applesauce
  






Instructions



1. Preheat oven to 350ºF.
   
2. Line mini muffin pans with paper liners.
   
3. In a large bowl cream together the margarine, and sugar.
   
4. Add eggs and beat until smooth.
   
5. Blend in cinnamon, allspice baking powder and baking soda.
   
6. Alternately add in a half a cup of applesauce, one cup of flour, remaining applesauce, and remaining flour.
   
7. Stir just until blended together.
   
8. Pour batter into muffin cups 2/3's of the way full.
   
9. Bake in preheated over for 17 minutes.
