    1 Cup Sugar
    2 Tablespoons Flour
    1/2 teaspoon salt (in mixture)
    2 teaspoons salt (in pasta water)
    1 3/4 Cups pineapple juice
    2 eggs beaten
    1 Tablespoon lemon juice
    3 quarts water
    1 Tablespoon oil
    1 16oz package of Acini de Pepe (pasta in a box)
    3 11oz cans mandarin oranges, drained
    9oz maraschino cherries, halved
    1 20oz can crushed pineapple
    1 20oz can chunk pineapple (tidbits), drained
    1 Cup miniature marshmallows
    9oz whipped topping

    Drain pineapple, reserve syrup. Drain mandarin oranges, reserve syrup. Combine sugar, flour, 1/2 tsp salt. Gradually stir in 1 3/4 cups pineapple juice or add juice from mandarin oranges if not enough pineapple juice. Add beaten eggs and cook over medium heat until thickened, stirring all the while. Add lemon juice. Cool to room temp. Bring water to a boil, add oil and salt and cook pastas 10-12 minutes. Add to previous room temp mixture. Cover and refrigerate overnight. Add remaining ingredients (pineapple, oranges, cherries, marshmallows) and refrigerate a couple hours to meld flavors.

    Makes about 25 servings.
