12 OZ UNCOOKED SPIRAL SPASTA
4 MEDIUM CARROTS, SLICED
3 CELERY RIBS, SLICED
1 CAN KIDNEY BEANS, RINSED AND DRAINED
1 CAN GARBANZO BEANS, OR CHICK PEAS, RINSED AND DRAINED
1 LARGE ONION, HALVED AND THINLY SLICED
1 CUP SLICED MUSHROOMS
1 MEDIUM GREEN BELL PEPPER, JULIENNED
1 CAN PITTED RIPE OLIVES, DRAINED AND SLICED
1 JAR MARINATED ARTICHOKE HEARTS, DRAINED AND COARSELY CHOPPED.
DRESSING;
1/2 CUP WHITE WINE VINEGAR OR CIDER VINEGAR
1/2 CUP CANOLA OIL
1/3 CUP SUGAR
2 TBSP GRATED PARMASAN CHEESE
3/4-1 TSP GARLIC POWDER
3/4 TSP SALT
1/8 TSP PEPPER
Recipe
COOK PASTA ACCORDING TO PACKAGE DIRECTIONS; DRAIN AND RINSE IN COLD WATER. PLACE IN A LARGE BOWL; ADD THE NEXT NINE INGREDIENTS. IN A JAR WITH A TIGHT-FITTING LID, COMBINE THE DRESSING INGREDIENTS; SHAKE WELL. POUR OVER SALAD AND TOSS TO COAT.
