Fake Cinnabon Cinnamon Rolls

This is a tradition with me. I always make these for the morning after Thanksgiving. They kick off the Christmas Shopping Season wonderfully and gives the guys at home something to munch on while watching sports!

1/2 Cup warm water
2 packages dry yeast
2 Tbsp. sugar
1 package (3 1/2 ounces) instant vanilla pudding mix
1/2 Cup margarine, melted
2 eggs
1 tsp. salt
6 Cups flour
1 Cup butter, softened
2 Cups brown sugar
4 tsp. ground cinnamon
CREAM CHEESE FROSTING:
8 ounces cream cheese, softened
1/2 Cup margarine
1 tsp. vanilla
3 Cups confectioners' sugar
1 Tbsp. milk
Recipe
In a small bowl, combine water, yeast and sugar. Stir until dissolved. Set aside.
In a large bowl, take pudding mix and prepare according to package directions. Add margarine, eggs and salt. Mix well. Add yeast mixture. Blend. Gradually add flour; knead until smooth. (You will need approximately this much flour.) Place in a large greased bowl, cover and let rise until doubled. Punch down dough and let it rise again. Then roll out on floured board to 34x21". Take the 1 cup butter and spread over surface. In a small bowl, mix brown sugar and cinnamon. Sprinkle over top of dough. Roll up jellyroll fashion very tightly pinching edge to dough to seal but not ends.
With a knife, put a notch every 2". Cut with thread or knife. Place on lightly greased cookie sheet 2" apart. Take hand and lightly press down on each roll. Cover and let rise until double again.
Bake at 350 degrees for 15-20 min. Take out of oven when they start to turn golden brown. DON'T OVERBAKE. Frost warm rolls with Cream Cheese Frosting.
CREAM CHEESE FROSTING:
Combine all ingredients until smooth. Makes 20 very large rolls.
