    Chicken Enchiladas a la Nick

    We didn't create this one; however, this is Nick's favorite one to make .... so far.

    List of Ingredients




    1 pkg softened cream cheese
    1 Tbs. ground cumin
    1/8 tsp. salt
    2 C cooked chopped chicken
    6 8" tortillas - we prefer flour
    1 can cream of chicken soup
    2 C milk
    8 jalapeno peppers chopped
    1 C shredded Monterrey Jack cheese (4 ozs.)
    1 small carton sour cream

    Recipe



    Preheat oven to 350 degrees.

    Combine sour cream, cream cheese, cream of chicken soup, 1 C milk and jalapeno peppers in a bowl and set aside.

    Mix 1 C of milk, salt and cumin in a medium bowl. Add chicken and stir together until well combined.

    Spoon chicken mixture onto each tortilla, spreading to the edges. Roll tortilla up and place seam down in a greased casserole dish.

    Pour sour cream mixture evenly over enchiladas. Cover with foil and bake for 35 minutes.

    Remove and sprinkle with cheese. Return to the oven until cheese melts.

    Makes 4 servings.
