1 can crab meat
1 C grated Parmesan cheese
2 eggs, beaten
1/2 C finely chopped green pepper
1/2 C finely chopped onion
1 tsp. Dijon mustard
1/2 C dry bread crumbs
1/4 C oil

Mix together crab meat, Parmesan cheese, eggs, green pepper, onion, and Dijon mustard until well blended. Shape mixture into 8 (3 inch) patties. Coat with bread crumbs. Heat oil in large skillet over medium-high heat. Cook patties for 3 minutes per side or until golden brown.
