    1 lg. onion diced fine
    Enough olive oil to cover bottom of a good sized deep pan.
    1 lb ground beef (85% lean)
    1 lb lean Italian sausage
    Pepper
    Garlic (chopped)
    1 lg can crushed tomatoes with tomato puree
    2-3 small cans Italian style tomato paste
    1/2 to 3/4 C Marsala red cooking wine
    1 medium can tomato sauce
    Italian seasoning mix
    basil
    oregano
    1 bay leaf
    sliced fresh mushrooms - match amount to personal choice
    fennel seeds
    Parmano cheese (or mix of parmesan and romano)
    1 box mostaciolli
    Mozzarella cheese - sliced
    Fresh parsley

    Recipe



    Preheat oven to 350 degrees F. Spray large baking pan with nonstick cooking spray.

    Cook onion (not fry) in olive oil until it turns white (not brown).

    Cook meats together, tearing up with a fork, and drain grease.

    Mix meat and onion together and sprinkle with a little pepper. Add a teaspoon (or more) of fresh chopped garlic and one large can of crushed tomatoes with tomato puree. Then add 2-3 small cans Italian style tomato paste. Add 1/2 to 3/4 C Marsala red cooking wine and 1 medium can tomato sauce. Mix well. Add water depending on thickness you like for your sauce. Add Italian seasoning mix, lots of basil, a little oregano, and 1 bay leaf. Let simmer for almost an hour. Throw in sliced fresh mushrooms and season to taste. **Go easy on oregano but heavy on Italian seasoning mix and basil. You may also add fennel seeds - I do! At this time, add more garlic! Sprinkle with parmesan/romano cheese.

    Boil slightly salted water for pasta. Make sure water is boiling before adding pasta. Add pasta and lower gas a little, stirring constantly so pasta doesn't clump. Cook al dente.

    Place a little pasta into large pan and add a little sauce. Continue doing this until both pasta and sauce are in one large pan. Gently toss pasta to avoid breaking. Sprinkle top with parmesan/romano cheese. Place thin slices of mozzarella cheese on tope of mostaciolli and sprinkle with fresh parsley, if desired.

    Place in oven at 350 degrees until cheese is melted on top.
