Open-Faced Egg Salad & Veggie Sandwich

3 hard-boiled eggs, chopped
3 Tbs mayonnaise
1 1/2 tsp prepared mustard
1/8 tsp salt
dash pepper
1/2 C chopped onion
1 clove garlic, minced
1/2 tsp dried basil
1/2 tsp dried oregano
2 Tbs vegetable oil
2 medium zucchini, thinly sliced
4 slices sourdough bread, lightly toasted
1 medium tomato, thinly sliced
1 C shredded Cheddar cheeseRecipe
Combine eggs, mayonnaise, mustard, salt and pepper in small bowl. Stir and set aside.
Saute onion, garlic, basil and oregano in oil until onion is soft.
Add zucchini. Cook until tender, stirring occasionally.
Spread egg salad on bread slices and arrange bread slices on baking sheet.
Top with tomato slices and spoon zucchini mixture over tomatoes. Sprinkle with Cheddar cheese.
Broil 4 inches from heat until cheese melts.
