1 24 oz can Dinty Moore Chicken & Dumplings
1 C chicken broth
1 C salsa
1 15 oz can black beans, drained and rinsed
1 11 oz can corn with green and red bell peppers, undrained
1/4 tsp chili powder
2 8 inch flour tortillas, cut into thin strips and fried in vegetable or light olive oil until crispy
sour cream
guacamole
fresh cilantro sprigs, for garnish
Recipe
In large saucepan, combine chicken and dumplings, chicken broth, salsa, beans, corn and chili powder. Heat over medium heat until simmering, about 10-12 minutes. To serve, ladle chowder into bowls and top with tortilla strips, sour cream and guacamole, if desired. Garnish with fresh cilantro sprigs and serve. Serves 6.
