Crepes with Caramelized Bananas

These are so good filled with nutella, fresh fruit or mashed potatos for blintzes.
Makes 4 large crepes

Ingredients for Crepes
1/2 cup all purpose flour
1 egg
3/4 cup milk
1/2 tsp sugar
dash of salt
1 tsp vanilla if desired
2 TBSP butter, divided into 4 pieces
Ingredients for Caramelized Bananas
1/2 cup sugar
3 TBSP water
3 large bananas, cut into 1/2" slices
3 TBSP lemon juice
2 TBSP butter
1 TBSP dark rum, optionalRecipe
Directions for Crepes:
Mix flour and egg with 1/4 cup of the milk, stirring with whisk until smooth. Mix in remaining 1/2 cup milk, sugar, salt and vanilla if using. Stir until well combined.
Melt 1 piece of butter in a large (10 - 12" nonstick skillet). When hot, add about 1/3 cup batter and swirl pan to coat bottom. Cook over medium to high heat for about 2 minutes on the first side or until nicely browned and then turn and cook for 1 minute or until 2nd side is well cooked. Continue with remaining butter and batter to make 3 more crepes. Stack on a plate and cover with plastic wrap and set aside while making filling.
You could use a smaller pan to make smaller crepes.
Directions for caramelized bananas:
Put sugar and 1 TBSP water in a large skillet. Bring to boil over high heat, stirring until sugar is just moistened. Continue to cook without stirring for 3 minutes or until mix turns into caramel, shaking pan near the end of cooking period so it doesn't burn around the edges.
Add bananas, lemon juice, butter and remaining 2 TBSP water. Cook and cover over medium low heat for 3 - 4 minutes. Stir to ensure there are no lumps in caramel. Let come to room temp and stir in rum if using.
Divide among 4 crepes.
