    1 1/2 lbs ground lamb
    Onion
    Spices (see below)
    Pitas to serve

    Chop onion in the food processor and then squeeze all of the liquid out of it between paper towels. Add onion back to the processor with a ton of garlic, a ton of cumin, cayenne pepper, paprika, red pepper flakes, garlic and onion powder, kosher salt, rosemary and black pepper and a touch of olive
    oil and made a fine paste. Combine paste with 1 1/2 lbs
    of ground lamb and form into 4 square patties. Fry in dry skillet until well browned. Serve in pitas or over rice pilaf.
