    Chicken Cordon Bleu

    Recipe Introduction

    This is so easy and so elegant! Perfect for company.

    List of Ingredients

    4 skinless, boneless chicken breasts
    1/4 tsp salt
    1/8 ground black pepper
    6 slices swiss cheese
    4 slices ham
    1/2 cup Italian Seasoned bread crumbs
    1 egg, beaten
    4 Pats of butter

    Recipe

    Preheat oven to 350 degrees F. Coat a 7 x 11" baking dish with non stick cooking spray (I use butter)

    Pound chicken breasts to 1/4 inch thickness.

    Sprinkle each piece of chicken on both sides with salt and pepper. Place 1 slice of cheese and 1 slice of ham on top of each breast. Roll up each breast and secure with a toothpick. Dip in egg, roll in breadcrumbs. Place in baking dish and top each piece with pat of butter.

    Bake for 30 - 35 minutes, or until chicken is no longer pink. Remove from oven and place 1/2 slice cheese on top of each breast. Return to oven for 3 - 5 minutes, or until cheese has melted. Remove toothpicks and serve immediately. Good served with rice and corn.
