Chicken and Yellow Rice

List of Ingredients
1 package chicken parts (I use legs and thighs), it works with skin on or off depending on your preference.
1 package of yellow rice mix (I use Vigo or Goya)
1 medium onion, chopped coarsely
2 cloves of garlic, minced
2 TBSP Olive oil (approximately - I've never measured)
A handful of green pimento olives sliced
Recipe
Brown chicken in dutch oven in olive oil. While browning sprinkle with assorted spices: I use Sazon, Adobo with Cumin, Red Pepper Flakes, Garlic Powder and Onion Powder. Flip the chicken over and season the other side of the chicken with the same spices. When browned to your liking, add onion and garlic and cook on high heat until onion is translucent (be careful not to burn garlic) Scrape up the browned bits on the bottom on the pan. If keeping the skin on the chicken and there is an excess of fat in the pan, drain it but keep about 2 TBSP in the pan. Add Rice Mix to pan and add hot water or chicken stock (as directed on rice box - it will vary depending upon which brand/size you buy). Add pimento olives. Bring to boil and stir. Cover and lower heat. Cook as directed on box until rice is tender (usually around 20 minutes). If desired, during the last 5 minutes, add a small can of green peas or any kind of bean.
