Broccoli Quiche

Recipe Introduction
This is so quick and easy and so delicious. I make this with frozen spinach also. I add a dash of nutmeg when using spinach.
List of Ingredients
6 large eggs, beaten
One 10 oz box frozen chopped broccoli, thawed and well drained (I squoze it in several layers of paper towel) OR 1 10 oz box frozen chopped spinach, thawed (Squeeze in several layers of paper towels to get the liquid out)
1 cup shredded reduced fat or regular cheddar cheese
1/2 cup grated parmesan (I used romano)
1/2 cup 1% lowfat milk (I used whole milk)
2 tsp Dijon Mustard
1/2 tsp garlic powder
3 slices whole wheat bread, cut into 1/2" cubesRecipe
Preheat oven to 375. Coat a 9" pie plate with non stick cooking spray and set aside.
Mix the eggs, broccoli, cheeses, milk, mustard and garlic in a large bowl.
Arrange bread cubes over the bottom of the pie plate. Pour the egg mixture evenly over bread cubes. Press gently to create a level surface.
Bake until golden brown about 35 minutes. Let sit 10 - 15 minutes before serving.
