    These next recipes are from Quick Cooking Magazine...
    Sounded good to me..haven't tried any though...

    Country Brunch Skillet

    6 bacon strips
    6 cups frozen cubed hash brown potatoes
    3/4 c chopped green pepper
    1/2 c chopped onion
    1 t salt
    1/t pepper
    6 eggs
    1/2 c shredded cheddar

    Recipe



    In a large skillet, cook bacon until crisp. Remove, crumble and set aside. Drain, reserving 2 T of drippings. Add potatoes, and veggies plus salt and pepper; cook and stir for 2 minutes. Cover and cook, stirring occasionally, until potatoes are browned and tender, about 15 min. Make six wells in the potato mixture; break one egg into each well. Cover and cook on low heat for 8-10 min or until eggs are completely set. Sprink with cheese and bacon. Yield: 6 servings *note* picture looks very appealing*
