fruit cobblers made with bags of frozen, ready to use fruit. Toss 3-4 C fruit with about one quarter cup sugar and 1t lemon juice. In bowl make either baking powder biscuits or a batch of basic muffin batter. 2C flour, 1/2 C sugar, 2t baking powder, beat together 1Cmilk, 1 egg, 1/4 C oil. Pour about 2/3 of this over the fruit so it isn't too thick. Bake rest in muffin pan. Bake at 375F for about 30-35 minutes till golden brown.
You can use fresh fruit but check to see the fruit is soft before removing from oven. To make as upside down cake put 4T butter in pan, melt in oven, add 2-3T brown sugar, stir well, put fruit over, pour cake batter on top. Bake. Cool in pan ten minutes before flipping over. Cool fully. Recipe
